What does U.M.A.O. Certified mean?
The Course is 40 hours of instruction on the art of olive oil and its tasting. The certification qualifies the holder to participate in Olive Oil “Panel Taste Rating,” which is a standardized blind tasting intended to remove subjectivity from claims of Olive Oil quality.
The Panel Tasting qualifications are indispensable to establish objectively: (1) Olive Oil sensorial qualities necessary to meet Extra Virgin Olive Oil legal certification aimed at protecting consumers; and, (2) Olive Oil culinary qualities coveted by connoisseurs and gourmet.
The U.M.A.O. came about as a result of the European Union and is located in Rome, Italy. The health and culinary merits of Olive Oil have been precious for most Italians throughout history. Simply put, they know great olive oil!
Before scientific Chemistry and Panel Tasting came about, for centuries Italians simply relied on getting Olive Oil directly from reliable Olive Farmers nearby. That is why Olive Oil is practically a cult in Italy! Since Olive Oil now appears in supermarkets under many brands and labels all over the world, olive farmers, olive oil producers, and Academic Sciences looked for a scientific way to qualify Olive Oil. Chemical Analysis and Panel Tasting provided the solution.
Say hello to Pier Antoniucci, Morgan Hill Sister Cities resident, holder of a U.M.A.O. Certified Olive Oil Taste rating, and long-time valuable member! He’ll lead the event attendees through a great evening of fun and a locally grown and produced olive oil!
